The South has some of the best and worst cooking in the world. For every highlight, there are a million other recipes that should have died with the advent of refrigeration.
But that doesn’t stop some people from keeping these country cooking traditions alive and, in some cases, innovating upon them.
Bernard Hardison is a dude who loves cooking. He loves cooking so much, in fact, that he doesn’t just do it with meats we know and love. Instead, he’ll deep fry a snake, make a raccoon gumbo or create a delightful spread of meats and BBQ delights that would make any reasonable person gag.
While it may look gross on the surface, I’d be lying if I said I wouldn’t try it — what if raccoon is delicious?
